Creative Uses for WIC Food

OK folks, I need help. Maybe we all need the help. My kid-os get WIC, and we are exceedingly grateful, but...

We get a jar of peanut butter each month and currenly have 4 unopened jars in addition to the one now opened. The kids really don't eat PB&J sandwiches as Mia doesn't eat bread.

So, anyone have favorite recipees or ideas for using the peanut butter?

We also get 5 pounds of cheese each month - yes, I said 5 pounds. OK, if I got milk instead of cheese for two of them I could cut it down to 3 pounds, but cheese costs more than milk, so I get the cheese.

Any favorite recipes or ideas for using cheese? It has to be cheddar, mozzarella, or colby sometimes, and can be shredded. But I currently have about 10 pounds of cheese in the freezer and am desperate for new creative ideas for using this stuff. Anyone have a fabulous homemade mac n' cheese recipe they can share?

Also, the cereal piles up - we usually donate a lot of it to the Jesus Cupboard at our church to help feed others. But sometimes I feel like donating WIC food is just donating what these folks already get, so I try to donate canned meats, etc. But the cereal piles up, too.

OK, so if you can send ideas or links, or recipes, I would be so greateful.

Here is a favorite at our house.

Tator tot casserole

1 & 1/2pd ground beef
1/2 bag tator tots
1 & 1/2 cups shredded cheese
1/2 bag frozen peas
1/2 bag frozen corn
2 cans cream of celery
1/4 cup milk
Preheat oven to 375
cook up ground beef and drain fat, place in large bowl. Add frozen peas and corn to meat mixture. In small bowl mix 2 cans of Cream of Celery and 1/4 cup milk. Stir until completely mixed, add to meat mixture. Still until combined. Add mixture to 9x9 glass pan.Cover with cheese, layor with tator tots. Place plan on cookie sheet and cook for 45 mins or until cheese is completely melted.

I have never met a person who didn't like this recipe. Doubles great!

I think it is awesome that you are looking for uses for the WIC donations, but this is a very unique time to most of our delicate histories, and personally I think you should not be accepting the WIC food if you cannot use it. Many other WIC families need that food and supplies are limited, as well as the funding which has all been cut recently and will only continue to dwindle. Please leave those resources for someone who cannot live without them.

A couple of peanut butter ideas: two of our favorite snacks are celery sticks with peanut butter or cream cheese (use a knife to spread it into the valley of the celery) and bananas dipped in peanut butter (just put a little pb on a plate and dip chunks of banana in it).

My kids love to spread peanut butter on graham crackers and then put raisins on it for a snack. They drink a glass of milk with it and we have used our Wic for the day:) They also love sliced cheese with crackers for lunch add some carrots and they are all set. For the cereal we put it in baggies for a snack in the car or at an appointment.

You know WIC is not provided by the government, but by the Red Cross and and supported by those who donate to the Red Cross. So all you are doing when you donate WIC foods, is taking from one charity and giving it to another. It's better to just get what you need from the WIC checks, you don't have to use everything on it. The less money you take from the charity, the more that will be left there for others who really need it. Maybe something to think about.
